Once the beans are roasted, this expands to over 1,000 compounds

The roasting process produces around 21 different Acids: Acetic, Lactic, Malic, Citric, etc.

Generally, the more acidic, the more Aroma is perceived

Arabica coffees, grown at higher elevations than Robustas, usually exhibit more acidity.
